Ezra Dagan studied acting at Renanim art school and the Theatre Studio Group of Nola Chilton, and mime with Claude Kipnis, himself a student of Marcel Marceau. Since 1974 he was a leading actor at the Habimah National Theatre, where, he played, among other plays, in On Frivolity and Hypocrisy, Underground Water, Twelfth Night , Troilus and Cressida, A Midsummer Night's Dream, Peter Turini's version of The Marriage of Figaro, Can't Pay, Won't Pay, The Trial, The Castle , The Italian Straw Hat, and Scapin. In other theatres Dagan took part in Waiting for Godot, She Stoops to Conquer, Fando and Lise, Mandragola at the Haifa Municipal Theatre, Napoleon Dead or Alive at Bimot Theatre, Monsieur Fugue at the Godik Theatre, The Patriot at Neve Tsedek Theatre, Peer Gynt, and The Love's Potion at The New Israeli Opera. He is now a leading actor in the company of The Cameri Theatre, where he appeared, among other plays, in Scapin, Caucasian Chalk Circle, The Miser, Murder.

Dagan is famous as one of Israel's most popular mime artists, and has been constantly seen on TV in shows such as Cat Shmil, A Nice Butterfly, and other shows. He appeared in many children shows, and with his wife Irit runs a comic theatre, Minitron. Films include Stalin's Children, Nurit, A Gift from Heaven, The Cowards, America- 3000, Behind Bars 2, and the major role of Rabbi Levertov in Steven Spielberg's Schindler's Lists, which has inspired a one-man show he devised and appeared in.
